Combine dark soy sauce, oyster sauce, hoisin sauce, and mirin in a small bowl. Set aside.

Heat vegetable and sesame oils in a medium skillet over high heat. Add onion and garlic, cook for 1 1/2 minutes until beginning to turn golden.

Add beef mince and cook, breaking it up continuously, until it changes from pink to light brown.

Add the prepared sauce and cook for 2 to 3 minutes until the beef is well caramelized and sauce begins to thicken.

Push beef to one side of the pan to create space for the noodles. Add water and place noodles in the liquid.

Allow noodles to soak for 45 seconds, then turn. Wait another 30 seconds, untangle the noodles, then toss with the beef mixture.

Add bean sprouts and toss for 1 minute or until sauce reduces to coat the noodles evenly and noodles are fully cooked.

Serve immediately, garnished with sliced green onions and sesame seeds.
