# What You'll Need:

→ Chicken Fried Rice

01 - 2 chicken breasts, diced into cubes
02 - 4 packages (8.5 oz each) Uncle Ben's Jasmine Rice (or 6 cups leftover rice)
03 - 1 cup julienned carrots
04 - 1 cup white or yellow onion, small dice
05 - 3 green onions, sliced thin
06 - ½ cup frozen peas
07 - 1 cup butter (2 sticks)
08 - 3-4 tablespoons garlic puree (or 10-12 cloves)
09 - ½ cup soy sauce
10 - ¼ cup roasted sesame oil
11 - 3 eggs
12 - Sesame seeds for garnish
13 - ½ lemon for juicing
14 - Salt, black pepper, and white pepper to taste

# How to Make It:

01 - On a cutting board, cut each chicken breast down the middle into 2 pieces. Slice each piece into ribbons, then cut each ribbon into small cubes. Place all chicken cubes in a bowl. Season with 3 tablespoons roasted sesame oil, 1 tablespoon garlic puree, salt, black pepper, and white pepper. Toss thoroughly and set aside.
02 - Arrange vegetables in small bowls near the cooking area. Keep packages of uncooked rice nearby. Prepare garlic butter by combining softened butter with 3 tablespoons garlic puree, salt, black pepper, and white pepper in a small bowl. Mash with a fork until well combined.
03 - Clean and scrape the Blackstone Griddle. Turn all burners to low setting. Wipe the griddle clean with paper towel and coat with a thin layer of sesame oil. Position all seasonings and ingredients within reach.
04 - Place about ¼ cup garlic butter on the left side of the griddle and add the marinated chicken. Season with salt and pepper and cook with a spatula.
05 - Place another dollop of garlic butter in the middle of the griddle and add diced onion. Season with salt and pepper. After 1 minute, add julienned carrots, green onion, and 1 tablespoon fresh garlic puree. Toss well and cook 3-4 minutes.
06 - On the right side of the griddle, add 2 tablespoons of sesame oil and a large dollop of garlic butter, spreading with the spatula. Place the rice on top and toss to coat thoroughly with butter and oil.
07 - Season all three cooking zones with soy sauce. Toss well with spatula. Ensure chicken is cooked through, then combine chicken, vegetables, and rice. Add frozen peas and toss together. Taste and adjust seasoning with additional garlic butter, soy sauce, or salt as needed.
08 - Push rice mixture to the back of the griddle. Add a tablespoon of butter to the cleared area and pour in the beaten eggs. Scramble them with salt and pepper, then combine with the fried rice.
09 - Optionally increase heat to medium to allow rice to sear slightly. Squeeze lemon juice over the rice for brightness and toss well. Garnish with sesame seeds and remaining sliced green onion. Transfer to a large baking sheet for serving.

# Handy Tips:

01 - Jasmine or Basmati rice works best for authentic restaurant-style texture. Day-old refrigerated rice also works well.
02 - Brown rice can be substituted for more fiber, but will result in a chewier consistency.
03 - Optional additions include garlic powder, fish sauce, green beans, bell peppers, or mushrooms.
