Breaded Morel Mushrooms (Printable Version)

# What You'll Need:

→ Main Ingredients

01 - 4 oz Fresh Morel Mushrooms (small to medium sized)
02 - ¼ cup cooking oil (50/50 blend of grapeseed or canola and salted butter recommended)

→ Breading Mixture

03 - 1.5 cups All Purpose Flour
04 - 1 teaspoon fresh ground black pepper
05 - 1 Tablespoon onion powder (optional)
06 - 1 teaspoon garlic powder (optional)
07 - 2 teaspoons fine salt or ground kosher salt
08 - 4 large Eggs
09 - 2 Tablespoons heavy cream or half and half

# How to Make It:

01 - Wash the morels quickly or swish them in cold water, then allow to drain on towels until needed. Very clean morels may not need washing.
02 - Beat the eggs and cream in a bowl large enough to accommodate the morels. Add the morels to the egg mixture and toss to coat. Allow them to sit in the egg mixture while preparing the flour.
03 - Mix the flour, garlic powder, onion powder, pepper, and salt in a large bowl big enough to toss the morels around.
04 - Heat the oil in a pan over medium-high heat until ready for frying.
05 - Transfer the egg-soaked morels to the flour mixture and toss until thoroughly coated. Remove them one by one, tapping gently to remove excess flour, then place into the hot frying pan.
06 - Cook on medium-high heat until the morels are golden brown and crisp on both sides, about 8-10 minutes total. Add more oil if the pan becomes too dry.
07 - Remove the golden morels from the pan and drain on a paper towel lined tray. Season with a pinch of salt while still hot.
08 - Allow the mushrooms to cool for a couple minutes before serving. Accompany with lemon wedges if desired.
