Cauliflower Shawarma Bowls (Print-Friendly Version)

# Ingredients You’ll Need:

→ Spice Blend

01 - 1 tablespoon curry powder
02 - 2 teaspoons paprika
03 - 1 teaspoon ground cumin
04 - 1 teaspoon kosher salt
05 - 1/2 teaspoon black pepper

→ Roasted Vegetables and Chickpeas

06 - 3 tablespoons extra-virgin olive oil
07 - 1 large head cauliflower, chopped into florets
08 - 1 (15-ounce) can chickpeas, rinsed, drained, and patted dry

→ Base

09 - 2 cups cooked white basmati rice

→ Optional Toppings

10 - Thinly sliced English or Persian cucumber
11 - Halved cherry tomatoes

→ Green Tahini Sauce

12 - 1/2 cup fresh cilantro leaves
13 - 1/2 cup fresh parsley leaves
14 - 1/4 cup tahini (sesame seed paste)
15 - 2 tablespoons fresh lemon juice
16 - 1/2 teaspoon minced fresh garlic
17 - 1/4 teaspoon ground cumin
18 - 1/4 teaspoon kosher salt
19 - 1/4 teaspoon black pepper
20 - 1/3 cup warm water (to thin sauce)

# How to Make It:

01 - Set the oven to 425°F (218°C). Prepare two rimmed baking sheets.
02 - Mix curry powder, paprika, ground cumin, kosher salt, and black pepper in a bowl. Toss cauliflower florets with 2 tablespoons olive oil, and chickpeas with remaining 1 tablespoon olive oil. Sprinkle 1 tablespoon of the spice blend over chickpeas and toss to coat. Use remaining spice blend on cauliflower and toss well.
03 - Spread cauliflower and chickpeas evenly on separate baking sheets. Place both in the oven and roast for 30 minutes total. After 15 minutes, shake chickpeas and toss cauliflower. Remove chickpeas after 30 minutes and continue roasting cauliflower for an additional 5 to 10 minutes until florets are lightly charred.
04 - Combine cilantro, parsley, tahini, lemon juice, minced garlic, ground cumin, kosher salt, and black pepper in a blender. With the motor running, slowly add 1/3 cup warm water until the sauce is smooth and creamy.
05 - Divide 1/2 cup cooked basmati rice into 4 bowls. Evenly distribute roasted cauliflower and chickpeas over each. Add optional cucumber slices and cherry tomatoes if desired. Drizzle with Green Tahini Sauce before serving.
