Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add chopped onion and garlic, and sauté for about 3 minutes until aromatic and softened. Add ground beef and stir, breaking apart, until lightly browned.
02 -
Add tomato paste, ground cumin, salt, and pepper to the beef mixture and stir until evenly combined. Continue cooking until beef is fully cooked through. Remove from heat and transfer the mixture to a bowl.
03 -
Lay a flour tortilla on a work surface. On one half, layer mozzarella cheese, cheddar cheese, cooked beef filling, an additional layer of cheddar, then mozzarella cheese. Fold the tortilla in half over the filling to form a half-moon shape. Repeat for remaining tortillas.
04 -
Heat 2 teaspoons vegetable oil in a large nonstick skillet over medium-low heat. Place a filled quesadilla in the skillet. Cook for approximately 3 minutes per side, or until tortilla is golden brown and cheese is fully melted. Repeat with remaining quesadillas.
05 -
Transfer cooked quesadillas to a cutting board. Cut each into halves or wedges. Serve immediately with salsa and guacamole as desired.
