Preheat oven to 350°F. Lightly grease a 9x13 inch baking dish with cooking spray or a thin layer of oil.

In a large skillet over medium heat, cook ground beef, chopped onion, and minced garlic until beef is browned and onion is translucent. Drain excess fat.

Stir in uncooked long-grain rice, beef broth, and cream of mushroom soup. Season with salt, ground black pepper, and paprika. Mix thoroughly and bring to a boil. Reduce heat and let simmer 5 minutes.

Transfer mixture to the prepared baking dish. Cover with aluminum foil and bake for 25 minutes.

Remove foil. Sprinkle shredded cheddar cheese evenly over casserole. Bake uncovered for 10 to 15 minutes until cheese is melted and bubbling.

Remove from oven. Top with chopped fresh parsley before serving.
