Chicken Philly Cheesesteak Sandwich (Printable Version)

# What You'll Need:

→ Proteins & Fats

01 - 8 oz. boneless chicken breasts or thighs, trimmed of excess fat
02 - 2 tbsp. avocado oil, divided
03 - 4 slices provolone cheese

→ Vegetables

04 - 1/2 medium red bell pepper, thinly sliced
05 - 1/2 medium green bell pepper, thinly sliced
06 - 1/2 large onion, thinly sliced

→ Seasonings

07 - 1/2 tsp. garlic powder
08 - 1 tsp. Italian seasoning
09 - Salt and freshly ground black pepper

→ Bread

10 - 2 sausage rolls or hoagie buns

# How to Make It:

01 - Season chicken all over with salt, pepper, and 1/4 tsp. garlic powder. Allow to rest at room temperature while preparing other ingredients.
02 - Thinly slice bell peppers and onions. Set aside.
03 - Heat one tablespoon of oil in a large skillet over medium heat. Cook chicken for 3-4 minutes per side until cooked through. Transfer to a cutting board and tent with foil.
04 - Add remaining oil to the skillet. Add bell peppers, onions, remaining garlic powder, Italian seasoning, and a pinch each of salt and pepper. Increase heat to medium-high and cook until vegetables are tender and slightly charred, about 6-8 minutes. Reduce heat to medium.
05 - Thinly slice the chicken into strips. Stir the chicken into the pan with the vegetables.
06 - Divide the chicken and vegetable mixture into two separate piles in the pan, shaping to match the bread size. Cover each pile with provolone cheese and allow cheese to melt completely.
07 - Warm the sausage rolls in the microwave for about 20 seconds.
08 - Scoop one pile of the chicken, vegetable, and cheese mixture into each warm roll. Serve immediately while hot.

# Handy Tips:

01 - Vegetable oil, canola oil, or olive oil can be substituted for avocado oil.
02 - Yellow or white onion works well in this recipe.
03 - Cheese options include provolone, Cheese Whiz, or white American cheese for authentic Philly flavor.
04 - Artesano Sausage Rolls, traditional Amoroso rolls, deli subs, or hoagies all work well as the bread component.
