Place chicken breasts in the base of the crock pot. Season evenly with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Toss to thoroughly coat the chicken.

Layer sliced red and yellow bell peppers over the seasoned chicken. Distribute cubed cream cheese evenly on top.

Pour chicken broth and heavy cream over the contents in the crock pot.

Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is fully cooked and tender.

Approximately 30 minutes before serving, cook penne pasta according to package instructions in a large pot of boiling salted water until al dente. Drain well.

Remove chicken breasts from the crock pot. Using two forks, shred chicken into bite-sized pieces.

Return shredded chicken to the crock pot, add cooked penne pasta and shredded Parmesan cheese. Stir to combine until the cheese is melted and the mixture is creamy.

Allow the mixture to warm through on the keep-warm setting for 10 to 15 minutes before serving.

Serve hot, garnished with chopped parsley and an extra sprinkle of Cajun seasoning if desired.
