# Ingredients You’ll Need:

→ Meat and Produce

01 - 1 pound ground beef
02 - 0.5 medium onion, diced
03 - 1 tablespoon garlic, minced

→ Cheeses

04 - 1.5 cups sharp cheddar cheese, shredded
05 - 1.5 cups mozzarella cheese, shredded

→ Base and Garnish

06 - 8 ounces tortilla chips
07 - Pickled jalapeño slices, for garnish
08 - Fresh cilantro leaves, for garnish

→ Seasonings

09 - 1.5 tablespoons ground cumin
10 - 1 tablespoon dried oregano
11 - 0.5 tablespoon paprika
12 - 0.5 tablespoon chili powder
13 - 1 tablespoon onion powder
14 - 1 tablespoon garlic powder
15 - 2 tablespoons light soy sauce
16 - 1 teaspoon granulated sugar

# How to Make It:

01 - Shred both the sharp cheddar and mozzarella cheeses. Set aside for melting later.
02 - In a large skillet over medium heat, drizzle a small amount of cooking oil. Add diced onions and cook for 30 seconds. Stir in minced garlic and continue to sauté for an additional minute, until fragrant.
03 - Add ground beef to the skillet. Break apart with a spatula and cook until partially browned.
04 - Add ground cumin, dried oregano, paprika, chili powder, onion powder, and garlic powder to the beef. Stir well to combine and continue cooking until the beef is no longer pink.
05 - Pour in the light soy sauce and sprinkle with sugar. Stir to incorporate. Cook until moisture is mostly absorbed and beef is fully cooked through.
06 - Carefully tilt the skillet and spoon out excess grease into a heatproof bowl or absorb with a paper towel, if desired.
07 - Reduce skillet heat to medium-low. Evenly distribute the shredded cheeses over the cooked beef. Cover the skillet and let the cheese melt for several minutes. Remove the lid and turn off the heat once cheese is fully melted and bubbling.
08 - Arrange tortilla chips on a large serving platter. Gently spoon or slide the cheesy beef mixture over the top of the chips.
09 - Top nachos with pickled jalapeño slices and fresh cilantro leaves as desired. Serve immediately while hot.

# Extra Tips:

01 - For the best melting texture, shred cheese from a block rather than using pre-shredded varieties.
02 - Customize your nachos with additional toppings such as diced tomatoes, shredded lettuce, avocado, olives, or sour cream.
03 - If preferred, substitute light soy sauce with kosher salt to taste.
