Garlic Chicken White Pizza (Printable Version)

01 - 1 unbaked pizza crust (preferably whole wheat)

02 - 80g part skim ricotta cheese
03 - 5 cloves garlic (2 minced, 3 thinly sliced)
04 - 120g cooked chicken, cut into bite-sized pieces
05 - 60g high-quality parmesan cheese, freshly grated
06 - 180g mozzarella cheese, grated or torn
07 - 5-6 large fresh basil leaves

# How to Make It:

01 - Heat oven to 260°C (500°F). Place a pizza stone in the cold oven to preheat thoroughly.
02 - Finely mince 2 cloves of garlic and thinly slice the remaining 3 cloves. Cut cooked chicken into bite-sized pieces.
03 - Stretch or roll dough into a thin circle on parchment paper or a silicone baking mat, creating slightly thicker edges for the crust.
04 - Combine ricotta and minced garlic in a small bowl. Dollop the mixture over the crust and spread roughly. Complete coverage isn't necessary.
05 - Sprinkle half of the parmesan and mozzarella over the ricotta layer. Distribute chicken pieces and sliced garlic evenly, then add remaining cheeses. Place basil leaves on top.
06 - Carefully remove the hot pizza stone from oven and slide the parchment or mat with pizza onto the stone. Bake for 8-10 minutes until crust is golden and cheese is bubbly.
07 - Remove from oven, slice into wedges and serve immediately.

# Handy Tips:

01 - Either fresh whole milk mozzarella (the kind that comes in a ball) or part skim mozzarella (from a block or bag) works well for this recipe.
02 - If you don't have a pizza stone, use a sturdy baking sheet instead.
03 - This pizza can also be grilled using the same instructions, pizza stone and all.
04 - For uncooked chicken, either bake a breast at 190°C (375°F) covered until cooked through, pan-sear it in a skillet with a lid, or grill it if you're planning to grill the pizza.
