Gooey Butter Cookies (Printable Version)

# What You'll Need:

01 - 113 grams salted butter, softened
02 - 225 grams (8-ounce package) cream cheese, softened
03 - 1 large egg
04 - 1 teaspoon vanilla extract
05 - 1 box (15.25-ounce) yellow cake mix
06 - 55 grams powdered sugar, plus extra for dusting

# How to Make It:

01 - Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
02 - In a large bowl, beat butter and cream cheese until creamy. Add egg and vanilla extract. Mix in the cake mix just until combined. If possible, chill the dough for 15-20 minutes to make it easier to handle as it will be sticky.
03 - Using a medium cookie scoop or spoon, portion the dough. Place powdered sugar in a shallow bowl. Roll dough into 2.5 cm (1-inch) balls and coat thoroughly in powdered sugar. Arrange on prepared baking sheet.
04 - Bake for 10 minutes, or until cookies are set but not browned.
05 - Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Dust with additional powdered sugar if desired.

# Handy Tips:

01 - You can use virtually any flavor of cake mix to make these cookies. Consider red velvet or Devil's food cake mix for variations.
02 - Feel free to add your favorite mix-ins or dip in chocolate for extra flavor.
03 - Store in an airtight container at room temperature for up to 3 days.
