Lay each tortilla flat. Spread a portion of white rice, then a layer of seasoned beef, nacho cheese sauce, chipotle sauce, and sour cream. Sprinkle shredded cheddar and mozzarella evenly over the fillings.

Heat a clean skillet over medium heat. Sprinkle 2 tablespoons shredded cheese directly onto the skillet where the burrito will sit. Place the assembled burrito seam-side down over the cheese. Grill until the cheese forms a golden, crisp crust, about 3 to 4 minutes. Flip and repeat on the second side until both are crisp.
