Ground Beef Enchiladas Bake (Print-Friendly Version)

Seasoned beef and creamy cheese wrapped in tortillas, topped with zesty sauce and baked until bubbling.

# Ingredients You’ll Need:

→ Filling

01 - 1 pound lean ground beef
02 - 1 medium onion, diced
03 - 2 cloves garlic, minced
04 - 1 teaspoon ground cumin
05 - 1 teaspoon chili powder

→ Assembly

06 - 8 flour or corn tortillas
07 - 2 cups enchilada sauce
08 - 1 cup shredded cheddar or Monterey Jack cheese
09 - Sour cream, for topping

# How to Make It:

01 - Preheat oven to 375°F (190°C).
02 - Heat a large skillet over medium heat. Add ground beef and diced onion, cooking until beef is browned and onion is translucent, about 5–7 minutes.
03 - Stir in minced garlic, ground cumin, and chili powder. Sauté for 1 additional minute until spices are fragrant.
04 - Distribute beef mixture evenly among tortillas. Roll each tortilla tightly and arrange seam-side down in a greased baking dish.
05 - Pour enchilada sauce over rolled tortillas and sprinkle evenly with shredded cheese.
06 - Transfer the dish to the oven and bake uncovered for 20–25 minutes, until the sauce is bubbly and the cheese turns golden.
07 - Remove from oven and allow to cool slightly. Top with sour cream before serving if desired.

# Extra Tips:

01 - Warming tortillas before filling keeps them pliable and reduces splitting during assembly.
