Rinse long-grain white rice under cold water until water runs clear. In a small pot, combine rice with 1 1/3 cups water. Bring to a boil, reduce heat to low, cover, and cook until rice is fluffy and water is absorbed, about 15 minutes.

In a large skillet over medium heat, brown ground beef with diced onion and jalapeños for 7 to 10 minutes. Stir occasionally until beef is fully cooked. Drain excess fat from skillet.

Stir 1/2 cup enchilada sauce into the cooked beef mixture for added flavor.

Grease a large baking dish. Spread 1/4 cup enchilada sauce evenly across the bottom to prevent sticking.

On each tortilla, layer refried beans, shredded cheese, cooked rice, and beef mixture. Roll tortillas tightly around fillings.

Place rolled burritos seam side down in the prepared baking dish. Pour remaining enchilada sauce evenly over them and top with remaining cheese.
