01 - 2/3 cup long-grain white rice, uncooked
02 - 1 pound ground beef, 80-90% lean
03 - 1 yellow onion, diced
04 - 3 jalapeños, diced and de-seeded
05 - 3 to 4 cups red enchilada sauce, store-bought or homemade
06 - 1 can (16 ounces) refried beans
07 - 2 cups shredded cheese, cheddar or Mexican blend
08 - 6 large flour tortillas

# How to Make It:

01 - Set oven to 375°F (190°C) and allow it to fully preheat while preparing other ingredients.
02 - Rinse long-grain white rice under cold water until water runs clear. In a small pot, combine rice with 1 1/3 cups water. Bring to a boil, reduce heat to low, cover, and cook until rice is fluffy and water is absorbed, about 15 minutes.
03 - In a large skillet over medium heat, brown ground beef with diced onion and jalapeños for 7 to 10 minutes. Stir occasionally until beef is fully cooked. Drain excess fat from skillet.
04 - Stir 1/2 cup enchilada sauce into the cooked beef mixture for added flavor.
05 - Grease a large baking dish. Spread 1/4 cup enchilada sauce evenly across the bottom to prevent sticking.
06 - On each tortilla, layer refried beans, shredded cheese, cooked rice, and beef mixture. Roll tortillas tightly around fillings.
07 - Place rolled burritos seam side down in the prepared baking dish. Pour remaining enchilada sauce evenly over them and top with remaining cheese.
08 - Bake in preheated oven for 15 minutes, or until cheese is melted and bubbling.
