Crunchy Oat Coconut Clusters (Printable Version)

# What You'll Need:

→ Base

01 - 4-5 cups rolled old fashioned oats
02 - ⅔ cup melted coconut oil (or canola oil)
03 - ½ cup honey
04 - ¼ cup light brown sugar
05 - 1 teaspoon vanilla extract
06 - ½ teaspoon salt
07 - 1/2-1 teaspoon ground cinnamon

→ Mix-ins

08 - ½ cup coconut flakes or chips
09 - 1 cup chopped nuts (cashews, almonds or pecans)
10 - Pumpkin seeds (optional)
11 - Dried fruit (optional)

# How to Make It:

01 - Preheat oven to 300°F (150°C). Line or grease a 15x18 inch (38x46 cm) jelly roll pan and set aside.
02 - In a large bowl, combine 4 cups oats, melted coconut oil, honey, brown sugar, vanilla extract, salt, cinnamon, coconut and nuts. Stir until thoroughly mixed. Add extra 1/2 cup oats if there's excess liquid at the bottom. Spread mixture evenly onto prepared pan.
03 - Bake for 10 minutes. Remove from oven, stir the granola, then press down firmly with a spatula to create clusters.
04 - Return to oven for 7-10 more minutes for chewy granola. For crunchier texture, stir and press down again, then bake for an additional 5 minutes. Note that granola will harden as it cools, so be careful not to overbake. Remove from oven and let cool completely.
05 - Transfer cooled granola to an airtight container for storage.
