In a medium pot, bring water with a pinch of salt to a rolling boil. Add the spinach and blanch for 30 seconds, or until just wilted.

Transfer spinach immediately to an ice bath to halt cooking. Once cooled, gently squeeze out excess water from the spinach.

Place the spinach in a mixing bowl. Add minced garlic, chopped green onion, soy sauce, salt, toasted sesame oil, and sesame seeds. Mix thoroughly until spinach is evenly coated.
