Mediterranean Chicken Meatballs (Printable Version)

# What You'll Need:

→ Meatball Base

01 - 450g ground chicken (or ground turkey)
02 - 1/4 cup whole wheat panko breadcrumbs
03 - 1 egg

→ Flavoring Components

04 - 1/3 cup sun dried tomatoes, packed in oil, chopped
05 - 1/4 cup feta cheese
06 - 1/4 cup parmesan cheese
07 - 2 cloves garlic, minced (or 1/2 teaspoon garlic powder)
08 - 1/4 cup green onions, chopped
09 - 2 tablespoons fresh parsley, chopped
10 - 1/2 teaspoon each salt and black pepper
11 - Fresh lemon juice, optional

# How to Make It:

01 - Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper or spray with nonstick spray.
02 - In a large bowl, combine ground chicken, breadcrumbs, egg, sun dried tomatoes, feta and parmesan cheeses, garlic, green onions, parsley, salt and pepper. Mix everything thoroughly using a spoon or your hands until well combined.
03 - Using a 1.5 tablespoon cookie scoop, form 2-inch sized meatballs and place them on the prepared baking sheet. You should yield approximately 18 meatballs.
04 - Bake in the preheated oven for 20-25 minutes, until the meatballs are lightly browned and cooked through.
05 - Squeeze fresh lemon juice over the meatballs if desired. Serve alongside a Mediterranean salad or create bowls with brown rice, homemade tzatziki sauce and fresh vegetables.
