Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper or spray with nonstick spray.

In a large bowl, combine ground chicken, breadcrumbs, egg, sun dried tomatoes, feta and parmesan cheeses, garlic, green onions, parsley, salt and pepper. Mix everything thoroughly using a spoon or your hands until well combined.

Using a 1.5 tablespoon cookie scoop, form 2-inch sized meatballs and place them on the prepared baking sheet. You should yield approximately 18 meatballs.

Bake in the preheated oven for 20-25 minutes, until the meatballs are lightly browned and cooked through.

Squeeze fresh lemon juice over the meatballs if desired. Serve alongside a Mediterranean salad or create bowls with brown rice, homemade tzatziki sauce and fresh vegetables.
