# How to Make It:

01 - Combine pineapple juice, honey, soy sauce, vinegar, fresh ginger, garlic, and cornstarch in a small bowl. Whisk until smooth, adding water if pineapple juice is insufficient.
02 - Toss chicken pieces with garlic powder, pepper, and 3 tablespoons cornstarch until evenly coated.
03 - Heat 2 tablespoons olive oil in a deep skillet over medium-high heat. Cook chicken in two batches to avoid crowding, 4 minutes per side until browned and internal temperature reaches 165°F (74°C). Add remaining 1 tablespoon olive oil for second batch. Transfer cooked chicken to a plate.
04 - Add a splash of olive oil if pan is dry. Place pineapple tidbits in skillet and cook undisturbed for one minute.
05 - Add bell pepper and onion to the pineapple, stirring occasionally. Sauté for about 3 minutes until vegetables are tender-crisp.
