Hobo Casserole Ground Beef (Print-Friendly Version)

# Ingredients You’ll Need:

01 - 1 lb lean ground beef

03 - 1 green bell pepper, diced
04 - 2 cloves garlic, minced
05 - 2-3 medium Russet potatoes, peeled and thinly sliced

07 - 1 cup shredded cheddar cheese

08 - 1 can (10.75 oz) condensed cream of mushroom soup

# How to Make It:

01 - Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray or butter.
02 - In a large skillet over medium heat, cook ground beef for 7-10 minutes, breaking it up until browned. Add diced onion, green bell pepper, and minced garlic; sauté for 5 minutes until softened and fragrant.
03 - In a bowl, mix condensed cream of mushroom soup with sour cream until smooth. Season with salt and pepper to taste.
04 - Arrange half of the sliced potatoes evenly in the baking dish, seasoning lightly with salt and pepper. Spoon half of the beef and vegetable mixture over the potatoes. Repeat layers with remaining potatoes and beef mixture, seasoning potatoes again. Pour cream sauce evenly over the top.
05 - Sprinkle shredded cheddar cheese evenly over the assembled layers. Bake for 30-35 minutes until potatoes are tender and cheese is golden brown.
06 - Remove from oven and sprinkle French fried onions on top. Return to oven for 5 minutes to crisp the onions. Let rest a few minutes before serving.
07 - Optionally garnish with sliced green onions and chopped fresh parsley before serving.
