Fresh Strawberry Cobbler (Printable Version)

# What You'll Need:

→ Strawberry Mixture

01 - 3 cups fresh ripe strawberries, hulled & diced
02 - ½-¾ cup granulated sugar

→ Cobbler Crust

03 - 1 cup all-purpose flour
04 - 2 teaspoons baking powder
05 - ½ teaspoon sea salt
06 - ½ cup granulated sugar
07 - 1 cup whole milk or almond milk, warm
08 - ½ teaspoon vanilla extract
09 - 8 tablespoons unsalted butter, melted

# How to Make It:

01 - Preheat oven to 190°C (375°F). Grease a 1.8-liter casserole dish and set aside.
02 - In a medium bowl, combine strawberries and sugar, tossing until syrupy. Set aside.
03 - In a large bowl whisk together flour, baking powder, salt and sugar.
04 - Add in milk, vanilla extract, and melted butter to the dry ingredients.
05 - Stir gently just until combined. A few lumps are preferred to avoid dense crust.
06 - Pour batter evenly into the prepared dish.
07 - Using a slotted spoon, distribute strawberries evenly on top of the batter, leaving excess syrup in the bowl. Do NOT stir.
08 - Bake for 35-40 minutes on the middle rack until golden brown.
09 - Remove from oven and let cobbler rest for a few minutes before serving.
10 - Spoon into bowls and top with vanilla ice cream if desired.

# Handy Tips:

01 - The fluffy cobbler crust is lightly sweetened since it pairs well with ripe strawberries and vanilla ice cream. You can increase the sugar for a sweeter crust if preferred.
