# How to Make It:

01 - In a medium pot, bring 2 cups of water or chicken broth to a boil. Add 1 cup of uncooked white rice, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed and rice is tender.
02 - Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add ground beef or turkey and cook until browned, breaking it apart with a wooden spoon or spatula.
03 - Sprinkle the taco seasoning over the cooked meat. Stir well and cook for 2-3 minutes to combine flavors. Adjust salt and pepper to taste.
04 - Add drained black beans, corn, and diced tomatoes to the skillet with the seasoned meat. Stir and cook for 5 minutes to heat through and blend flavors.
05 - Distribute the cooked rice evenly into 4 serving bowls. Top each with the meat and vegetable mixture, shredded lettuce, cheddar cheese, and a spoonful of salsa.
