Yaki Udon with Shrimp (Print-Friendly Version)

01 - 1 pack (7 ounces) udon noodles, preferably vacuum-packed
02 - 2 tablespoons neutral oil, divided
03 - 8 to 10 shrimp (about 3.5 ounces), peeled and deveined
04 - 1 garlic clove, minced
05 - 1 yellow onion, sliced
06 - 8 white mushrooms (about 4.25 ounces), sliced
07 - 1 carrot, cut into matchsticks
08 - 1 spring onion, green and white parts separated and chopped
09 - 1 tablespoon regular soy sauce
10 - Salt and pepper, to taste

11 - 1 tablespoon oyster sauce
12 - 1 teaspoon dark soy sauce
13 - 1 teaspoon rice vinegar
14 - 1 teaspoon brown sugar
15 - 1/3 teaspoon freshly crushed black pepper
16 - 2 teaspoons toasted sesame oil
17 - Pinch salt

# How to Make It:

01 - Boil the udon noodles according to package directions. Drain and rinse under cold water, drizzle lightly with oil, and set aside.
02 - Heat 1 tablespoon oil in a large skillet or wok over high heat. Sauté minced garlic for 1 minute, then add sliced mushrooms. Stir-fry until cooked. Add sliced onion, the white parts of spring onion, and carrot. Stir-fry 2 to 3 minutes. Season with a pinch of salt and pepper, remove vegetables from pan and set aside.
03 - Add remaining 1 tablespoon oil to the same pan. Add shrimp and stir-fry. Drizzle in soy sauce and season with a pinch of salt. Cook until shrimp turn opaque and pink.
04 - Add drained udon noodles to the pan with shrimp. Fry on high heat, stirring constantly, so noodles crisp slightly on the edges.
05 - Pour prepared sauce over the noodles. Stir well to coat all ingredients evenly.
06 - Return sautéed vegetables to the pan. Toss everything together until combined and heated through. Remove from heat and sprinkle with the green parts of spring onion.
07 - Plate the yaki udon while hot and serve immediately.

01 - For best texture, use vacuum-packed udon noodles and avoid overcooking. Prepare all ingredients before starting, as stir-frying is a quick process.
